Instructions

Step 1Mix: In a large bowl, combine rice, broccoli, cheddar cheese, Parmesan, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix until it forms a sticky, dough-like consistency.
Step 2Form: Scoop about 2 tablespoons of the mixture and roll into balls. If the mixture is sticky, lightly wet your hands.
Step 3Bake: Place on a parchment-lined baking sheet and lightly spray with oil. Bake at 400°F (200°C) for 18–22 minutes, flipping halfway through, until golden and set.
