Instructions

Step 1Steam the vegetables: Steam potatoes, broccoli, cauliflower, and carrots together for 10–12 minutes, until fork tender. Let cool slightly.
Step 2Mash & pulse: Transfer the veggies to a food processor and pulse a few times. Leave a few small chunks for texture.
Step 3Add flavor & binders: Stir in cheddar cheese, breadcrumbs, egg, garlic powder, salt, and pepper. If the mixture feels too wet, add more breadcrumbs as needed.
Step 4Form the tots: Shape into small tot shapes or balls using your hands.
Step 5Bake: Place on a parchment-lined baking sheet and bake at 400°F (200°C) for 18–22 minutes, flipping halfway through, until golden brown.
